Caribbean Rum

The Spirits & Whisky Company are specialists in sourcing & supplying, Caribbean rum.

Our rum is available for export in bottles or in bulk.

Our blend of rum is sourced predominantly from The Dominican Republic. However, to add character there are specially selected smaller parcels of rum from other areas of the Caribbean. These are expertly blended by our Master Blender in Amsterdam. Once blended, the rum is left to rest before it becomes ready for sale. This allows the rum blend to marry and be finally checked by the Master Blender before shipping.

Bulk exports of rum are made to many countries across the world and can be bottled locally to save on costs. With the current difficulties finding containers, the most economical way to ship rum is by 1,000L/IBC (18 x IBC per 20ft container). The rum is also shipped at natural strength to further reduce the shipping costs, making it even more cost efficient.

Don Chameleon Mexican Tequila

Together with our partners in Mexico, we supply Tequila in glass, in a range of bottle sizes. This is an interesting market. There is a definite trend towards the Consejo (The Mexican Council on Foreign Relations) increasing its control over the bottling of Tequila, with a strong desire for this to remain local. It is our view that this is driven by a concern for local employment. It is impacting bulk export. This is why The Spirit & Whisky Company is now completing its current and future contracts in Mexico. This we believe, will protect the supply from any possible barriers in the future.

Don Chameleon is our own brand Tequila,  available in 70cl and 75cl, 1L, 1.75L as well as minis in 5cl. The Don Chameleon brand is registered with the FDA for the United States.

The Story of Dominican Republic, and Caribbean Rum

Caribbean Rum Export

The story of rum must begin with its main ingredient, which provides its sweat distinctive flavour. Dominican rum is based on either fermented sugarcane juice or molasses, with roughly 90% of the world’s rum made from the latter. The balance is achieved from either the sugarcane juice or a combination of the two.

The Dominican Republic in the Caribbean was the first place in the new world where sugarcane was grown, introduced in 1502 by Christopher Columbus. The Dominican rum industry records show the earliest distillery was documented in 1852 but it is not clear when distillation began – probably mid 17th century. The origin of rum was a practical solution by the Spanish government to add value and diversify beyond sugar cane.

Maturation, as well as evaporation, occurs much faster in the Dominican Republic’s warmer climate. In Scotland, for example, a barrel might lose 8% of its contents to evaporation in the first 10 years of aging. In the Dominican Republic, the comparable figure is 32% and barrels cannot be refreshed or topped up to compensate for the evaporation, so the maturing rum gets a lot of exposure to oxygen. The Angel’s Share is the name given to the Rum (and Whisky etc.) that evaporates each year through the cask. This gives the remaining liquid great contact with the oak.
